Potato Bourbon Salad

I smoked a pork butt yesterday and was trying to figure out what to have as a side when I came across this recipe from one of my garde manger classes.  As spring and summer rapidly approach, this is a delicious and easy recipe to have with some bbq or grilled meat (I doubled the recipe):

  • 8 oz red potatoes, cut into large dice and cooked until tender
  • 2 tbsp each of celery (small dice), red onion and bacon cracklings (3 slices diced), reserve the bacon fat
  • 1/2 tbsp minced shallot
  • 3 oz mayo
  • 2 tbsp of chopped chives or green onions
  • 1 tbsp whole grain mustard
  • Bourbon, salt & pepper to taste
  • 1/2 tsp celery seed
  • Lemon juice to taste

Combine all ingredients (including 1 ounce of the bacon fat and chill.
