Tonight will represent my last night at the restaurant, and to celebrate the special tonight is mine.
I’ll be serving seared sea scallops, a mango/apple/fennel ‘salsa’ with a vanilla and saffron cream sauce. There will be a few other things going on with it, but that’s pretty much the jist.
In addition, I get to run the saute station, which makes sense given the special I’ve come up with. Plus, I’ve already been forewarned to bring a change of clothes as the guys have devised some prank to send me on my way.
I’m sure it will be all fun.
