Holy shit has the kitchen been hot during the past few nights.
Thursday night the power went out for about 5 minutes which fucked everything up, since all the heat producing items were still on but the ventilation system was off, thus producing an excess of heat that just couldn’t be dealt with.
I’m not even sure what was going on tonight, other than it’s summer and the days have been hot. No one complains when we have to go downstairs to the walk-in – it’s like heaven. The only drawback for me is that I wear glasses that fog up if I spend too much time in the walk-in.
And just so you know that I’m not bitching needlessly, even the chef and sous have been complaining (especially the sous who stands directly behind – or in front of – the salamander and oven usually set to 500).
Hopefully I’ll be able to find a cooler – and hence more professional – kitchen in North Carolina in a few weeks.
