The best lunch ever

I felt inspired for lunch a few minutes ago and this is what I made myself, after procuring the tomatoes earlier this morning.

In between the tomato slices is sauteed asparagus along with a little bit of balsamic/shallot vinaigrette.  I just topped the tomato with sea salt (Maldon sea salt to be exact), pepper and olive oil.

The chicken was what I made earlier this week, and the potatoes were some extra fingerlings that I roasted today while watching Euro 2008 (a few days ago I was Dutch, today I’m Portuguese), later to be finished with sweated shallot and truffle butter (and yes, some more Maldon sea salt – the best salt on earth).
